Vegetarian Bean Burgers

I must admit I struggled coming up with a menu plan this week. I really am sick of the sight of food as it was my baby’s first birthday party and deciding what to make and making it all, it has put me off. For this reason we are having such a simple week this week. I am in recovery mode!

This week I wanted to share this yummy recipe I use for Gluten Free Vegetarian Bean Burgers, I base it from this one on taste.com.au (image from site)

Ingredients
* gluten free breadcrumbs – usually about a cup
* 2 cans red kidney beans, rinsed, drained
* 1 small red onion, finely chopped
* 1/4 cup chopped fresh coriander
* 1 egg
* 1 1/2 tbs olive oil
* 60g mixed salad leaves, washed, dried
* 1 avocado, halved, stone removed, peeled, sliced lengthways
* tomato salsa dip (please check the ingredients – some store bought salsa has wheat in it – yes truly!)

Method
1. Reserve 185g (1 cup) of the red kidney beans and place the remaining beans in the bowl of a food processor. Process, in short bursts, until roughly mashed. Add the mashed beans, onion, coriander, egg and reserved whole beans to the gluten free breadcrumbs and stir until well combined. Use damp hands to divide the mixture evenly into 4 portions. Shape each portion into a patty about 2cm thick and 8cm in diameter.

2. Heat the oil in a large non-stick frying pan over medium heat. Add the patties and cook, uncovered, for 4 minutes each side or until golden brown and heated through.

3. Place the burgers on serving plates. Top with the salad leaves, avocado slices, bean patties and then salsa. Serve immediately.

Weekly Menu Plan

Monday – Gluten Free Vegetarian Lasagne

Tuesday – Stirfry vegetables (boys will get chicken also). Probably do satay for the adults and plain for the kids

Wednesday – Gluten Free Vegetarian Bean Burgers

Thursday – Tuna Risotto

Friday – Sundried Tomato, Basil and Fetta Soup

Saturday – Homemade Gluten Free Fish and Chips

Sunday – Simple Supper Day (meaning leftovers!)

    I just think it is great that you share your recipe with others so they can benefit from them also ;)
