This week I showing you the recipe for Gluten Free Potato Bake. This recipe is from bestrecipes.com.au. The best thing about this best recipe is that you can add pumpkin, sweet potato, carrot, parsnip – anything else really to it and it makes a really yummy vegie bake. A fantastic way to get the vegies into the kids! It is something that gets rave reviews wherever I go. It is also good as you can adjust for the amount of mouths you are feeding.
Gluten Free Potato Bake
- 4 potatoes, peeled and sliced
- 1 onion, peeled and sliced
- 300 ml cream(light works well also)
- grated cheese – use as much as you want!
Lightly grease a baking dish – I use spray oil. Then spread a layer of sliced potato on the bottom. Then add the a little onion, cream and a grated cheese. Add another layer of sliced potato – followed by the cream, onion and cheese. Continue until you run out of diosh or ingredients.
Finish with grated cheese. Bake in 180-190 degree ove. If the top gets too brown, then top with some foil. It can take a good 90 mins for the size I did above. When the potatoes are soft is when you know its cooked.

Friday -Vegetable Curry plus Chicken pieces for the boys
Saturday – Homemade Gluten Free Pizza
Sunday – Simple Supper
