One of the myths surrounding gluten free cooking is that it is hard. It isn’t really. Sure it requires forethought, specialist foods (in most cases) and careful preparation and cooking but it is not hard. So please take comfort in that if you are newly diagnosed or are cooking for a loved one who requires gluten free food.
To show you just how easy it is, here (from taste.com.au) is a simple pasta dish that I have made gluten free. Gluten Free pasta is readily available from the health food section of the majority of supermarkets and in health food stores. There are plenty of online places you can get them too. The trick to cooking with gluten free pasta is not too long. It doesn’t require as much cooking as normal pasta and use plenty of water and a big pot.
Gluten Free Pasta – Fettuccine Carbonara
Ingredients
- 375g gluten free fettuccine (or whatever you can find)
- 100g gluten free bacon, coarsely chopped
- 2 eggs, lightly whisked
- 1/2 cup (40g) finely grated parmesan
- 200ml thickened cream
- Shaved parmesan, extra, to serve
Method
- Cook the gluten free pasta in a large saucepan of salted boiling water until al dente. Drain well.
- Meanwhile, heat a medium frying pan over high heat. Add the bacon and cook, stirring occasionally, for 2-3 minutes or until just crisp. Remove from heat.
- Whisk the eggs, parmesan and cream in a medium bowl until well combined
- Season with salt and pepper.Return the hot pasta to the pan. Add the bacon and pour over the egg mixture.
- Gently toss until just combined (the heat of the pasta should cook the eggs; do not overcook).Divide evenly among serving bowls.
- Top with shaved parmesan and serve immediately.

Thursday – Chicken Burgers and Gluten Free Potato Bake
Friday – SIL’s birthday dinner
Saturday – Grand Final day so BBQ all day
Sunday – Simple Supper

Hi Theresa thanks for the comment. You do have to be careful with all packages meats. Sometimes things will be coated with wheat and gluten to stop things sticking. I know crazy. My SIL made her father very ill (who is a coeliac) by buying a packaged roast assuming it would be fine. It is a good practice to check everything.
Oh I am filing this recipe because even I can make carbonara and we can even buy gluten free pasta out here in the boon docks… this is going to come in handy when cooking for a friend who’s child is gluten free. Mind you I didn’t realise bacon could have gluten in it – can’t stand bacon so I’d probably use ham, would I need to check if that had a gluten additive too?
Thanks Kate. I don’t know for sure whether bacon has gluten in it or not, I do know that you have to be careful with all meats. I do know that sometimes packaged bacon and ham can have a coating on it that has gluten so you do have to check all packages.
Most bacon is generally safe. I have, however come across some that aren’t. Mayfair Breakfast Bacon (for example) contains wheat fibre in the ingredients! Ham is more likely to be an issue.
