The easiest snack I love to make is the humble pikelet – also known as a pancake! (just what the difference is I have no idea).
Easy to make, easy to eat, easy to sneak fruit into for the kids! the best part? Hubby makes them better than me, so he makes them for us.
Gluten Free Pikelet (or Pancake)
Ingredients
- 1 cup gluten free self raising flour
- 2 tbsp caster sugar
- 1 egg
- enough milk for the right consistency
Method
- Sift flour, add sugar, egg and milk
- Mix until the right consistency, just thin enough pour into a pan
- Let batter sit for 15 minutes.
- Heat a non stick pan on a med-low heat, coat with either oil spray or butter.
- Once pan is war, pour batter into pan forming circles.
- Watch for the bubbles on the pikelet to pop. (the bottom should be golden brown if its not the pan is not hot enough and if its black it is too hot)
- Flip and cook the other side
- Repeat with remaining mixture
- Enjoy with lemon and sugar or with jam.
Note – you can add mashed banana, stewed apple or drained berries to the mix to make fruit pikelets. (or choc chips for yummy choc chip ones) The ones in the above photo are made with mashed banana mixed in.
