Hello hello. I am hoping you are well. Please forgive me for the lack of a recipe again this week. I do have a good excuse! Today hubby went back to work so I was back to the front line. It was hard.
A few of you liked the Gluten Free Menu Plan from last week (thanks for letting me know!) so I thought I would do one again. It is simple and easy – just the way I like it.
Weekly Menu Plan
Monday – Vegetarian Tacos. – I make a mixture of canned tomatoes, onion, red kidney beans, capsicum, grated carrot and celery, cook it on the stove and serve in taco shells with toppings. We had lettuce, tomatoes, avocado, sour cream and grated cheese
Tuesday – Pasta with bean sauce. Using the bean sauce from last night, I cook up some gluten free pasta and stir through.
Wednesday – Polenta Pizzas – need to do more with polenta, made some for lunch the other day and Little Man loved it. He has requested it for dinner so we shall make these pizzas. Use gluten free stock and toppings and you are all set.
Thursday – Tuna Bolognese with rice. I wont be doing the rice cup, I have a rice cooker which is brilliant but this looks so easy and simple I couldn’t pass it up. Again, use gluten free ingredients.
Friday – Leftovers
Saturday – Mexibake – I make this vegetarian and gluten free by replacing the mince with a canned bean mix (2 tins) and vegie stock instead of taco seasoning.
Sunday – birthday party

Would’ve love to have been over for dinner on Monday! I can’t really eat beef, so I’m keeping your Vegetarian Taco in mind for myself next time the family requests tacos.
