Gluten Free Eggplant Parmigiana Recipe and Weekly Menu Plan

I love cooking. I love reading recipe books and cooking magazines. I love watching cooking and food shows and I love trying new recipes. However as a time poor, sleep deprived mum some of this has had to be put on the back burner (ha ha ha) until I get back into the swing of things.

This is why I love super quick and super easy meals to cook. Thanks to being a coeliac I don’t have the luxury(or budget really) to rely on take away meals. Every meal I eat has to be planned and yes usually by me. Think about that for a second… every single meal has to be made by me. Every. Single. Meal. So you can understand the reasoning of me wanting easy meals! Behold my Eggplant Parma. Quick. Easy and Yummy. So yummy you can cook it for a dinner party. Which I have done, several times. When you see what I do you will know its not a real parma, I realise this but this is adapted from a few recipes I have a seen and as such call it eggplant parma,

Gluten Free Eggplant Parmigiana

You’ll need:

  • eggplant (1 will serve 2 people)
  • jar of gluten free tomato pasta sauce – yeah some brands have wheat or gluten so watch that.
  • salt
  • grated cheese

What to do

  • Cut the eggplant in half. (or in 3 if the eggplant is really big)
  • Place cut side up into baking dish
  • Score the cut side
  • Sprinkle with salt
  • Pour over a generous amount of pasta sauce on each half
  • Sprinkle on top with grated cheese
  • Cover with foil
  • Bake in oven at least an hour
  • Uncover then cook until cheese is browned. 15-20 minutes.
  • Serve and enjoy

Gluten Free Weekly Menu Plan

MondayOven Baked Chicken Teriyaki – from Frills in The Hills – just ensure the soy sauce you use is gluten free and you are set

Tuesday - Gluten Free Eggplant Parma

WednesdayMacaroni Slice – again from Frills in the Hills (such yummy stuff she makes) – use gluten free pasta

Thursday – Slow Cooker Sausage Casserole – use Gluten Free Sausages (most butcher made ones are – just ask)

FridayQuinoa Chilli also done in the slow cooker. Use gluten free soy sauce.

Saturday – Nachos – we use the original dorito’s in the green bag. Not all corn chips are gluten free here in Australia – same with the salsa – check the jar. We love the organic one from Costco…mmm and grated cheese, then once cooked sour cream and avocado on top.

Sunday – Simple Supper Night which usually means leftovers.
