Gluten Free Chocolate Muffin Recipe & Weekly Menu Plan

So it was my Little Man’s very first day of school yesterday. The first day of the rest of his educational life. Big day for all concerned. So I was feeling like a little chocolaty, I also wanted Little Man to have something yummy when he came home so I whipped up these delicious gluten free muffins. I got the recipe here from Best Recipes and adapted it for me ie to make it gluten free.

Gluten Free Chocolate Muffins

  • 2 cups gluten free self raising flour (I used Orgran)
  • 1/3 cup cocoa powder (I used Coles Homebrand)
  • 1/3 cup caster sugar
  • 60g butter, melted
  • 1/2 cup choc bits
  • 1/2 cup Nutella
  • 1 egg, lightly beaten
  • 3/4 cup milk
  • 1/2 cup sour cream

Method:

  • Preheat oven to 200 degrees Celsius and prepare muffins tin
  • Sift gluten free flour and cocoa together and stir in caster sugar
  • Add other ingredients, mix with fork  (don’t over mix)
  • Pour mixture (place moreso as is quite thick) into the muffin tin
  • Bake 20 mins and leave in tin 5 mins
  • Turn out, cool and serve.

OMG nom nom. Anything with Nutella in it gets my vote. This looks great, will have to give it a shot. I have to ask, do you find Orgran flour better than others? I buy White Wings only because where I shop, it’s the biggest packet you can get and I bake a lot.

Thanks Taryn for your comment! I actually prefer Orgran over White Wings. At Coles and Woolies Orgran is usually cheaper by the unit, you know price per 100g? Orgran is in a 500g pkt and White Wings is in a 750g pkt. So I do buy 3 or 4 Orgran at a time as I do alot of baking as well.
