So it was my Little Man’s very first day of school yesterday. The first day of the rest of his educational life. Big day for all concerned. So I was feeling like a little chocolaty, I also wanted Little Man to have something yummy when he came home so I whipped up these delicious gluten free muffins. I got the recipe here from Best Recipes and adapted it for me ie to make it gluten free.
Gluten Free Chocolate Muffins
- 2 cups gluten free self raising flour (I used Orgran)
- 1/3 cup cocoa powder (I used Coles Homebrand)
- 1/3 cup caster sugar
- 60g butter, melted
- 1/2 cup choc bits
- 1/2 cup Nutella
- 1 egg, lightly beaten
- 3/4 cup milk
- 1/2 cup sour cream
Method:
- Preheat oven to 200 degrees Celsius and prepare muffins tin
- Sift gluten free flour and cocoa together and stir in caster sugar
- Add other ingredients, mix with fork (don’t over mix)
- Pour mixture (place moreso as is quite thick) into the muffin tin
- Bake 20 mins and leave in tin 5 mins
- Turn out, cool and serve.

Tuesday – Egg Bake with wedges
Wednesday - Baked Potatoes for all, Savoury Mince Toppings for the Boys and Kidney Bean and Tomato Mixture for me
Thursday – Noodle Cake with Capsicum Relish
Friday – Pasta Bake with garlic bread
Saturday – Crusty Potato Pizza – from That’s Life Readers Recipes Book Issue 1
Sunday - Roasted Pumpkin and Veg Soup with toasted sandwiches

OMG nom nom. Anything with Nutella in it gets my vote. This looks great, will have to give it a shot. I have to ask, do you find Orgran flour better than others? I buy White Wings only because where I shop, it’s the biggest packet you can get and I bake a lot.

Thanks Taryn for your comment! I actually prefer Orgran over White Wings. At Coles and Woolies Orgran is usually cheaper by the unit, you know price per 100g? Orgran is in a 500g pkt and White Wings is in a 750g pkt. So I do buy 3 or 4 Orgran at a time as I do alot of baking as well. (GF friends check out Taryn’s blog as she has some great GF recipes over there
