I know there are several versions of this recipe around, I have seen them in blogs, books – just everywhere. My girlfriend bought a dip to a BBQ 10 years ago and then I had never seen anything like it. I got her recipe for it, tweaked it a little and have been making it ever since. I take this dish everywhere and it is always requested. My husband was surprised I took this long to put this on! (I used a larger bowl than I normally do in the photo above so the dip does look a little lost - sorry about that!)
Gluten Free: Mexican Layered Dip
You will need:
- glass bowl (to display the layered affect)
- can re-fried beans – I use El de Paso low fat one
- 2 – 3 avocado’s
- splash lemon juice
- 125ml light sour cream
- 2 tbsp mayonnaise – watch mayo, different brands have gluten in them
- tsp paprika
- small onion, diced
- 2 – 3 tomatoes, diced
- 1 cup grated cheese
- natural corn chips – I use Doritos or Thomas Chipman
Assemble
- Bottom Layer – open can re-fried beans and spread in bottom of the glass dish
- Next Layer – Mash avocado and little lemon juice and spread on top of beans
- Next Layer – Mix sour cream, mayo and paprika together and spread on top of avocado
- Next Layer – Diced Onions
- Next Layer – Diced Tomatoes
- Top Layer – Grated Cheese
- Serve with corn chips or rice crackers

Thursday – Hotdogs. Yep hotdogs. It is Little Man’s birthday and that is his request for dinner. Me and Tiniest Man will be having Tuna Salad and Homemade Wedges
Friday – Zucchini and Rice Tart with salad
Saturday – Quesadillas – Salsa and Cheese for all plus Chicken for boys and Beans for me
Sunday – Leftovers! After 2 parties for Little Man over the weekend I will be sick of cooking by Sunday night thats for sure
