Ok so this recipe is not the most visually appealing. But I can tell you for such a simple dish it is soooooo yummy! Love this one so much. I got this recipe from here. As you can see it is meant to be with salmon but I cannot give my boys salmon, me and the baby are the only ones that will eat it so I use tuna as I know it will get eaten.
Gluten Free: Tuna and Potato Bake
Ingredients:
- 3 large potatoes, washed, peeled and diced
- 425g can of tuna, drained
- 1 large onion, peeled and diced
- 1 cup grated cheese
- 1 cup gluten free breadcrumbs- I use the Orgran All Purpose Crumbs
- 1/2 cup tomato sauce
- salt and pepper to taste
Method:
- Boil the potato and onion together in a large pot until the potato is soft
- Mash together. I use a little milk and butter to help me do so.
- Mix the tuna in the potato.
- Add the tomato sauce and grated cheese and mix well
- Spray a baking dish and place the mixture into the dish
- Sprinkle with gluten free bread crumbs, rice crumbs or all purpose crumbs
- Bake in moderate oven for 30 mins.

could you do soy cheese?
Gluten isn’t an issue in our house, but this looks like a yummy take on a traditional tuna casserole and I may just give it a try.

Tuna is so cheap for budget family meals and I am always looking for new ways to prepare it and I will definitely be giving this one a go.
