Gluten Free: Tuna and Potato Bake Recipe and Weekly Menu Plan

Ok so this recipe is not the most visually appealing. But I can tell you for such a simple dish it is soooooo yummy! Love this one so much. I got this recipe from here. As you can see it is meant to be with salmon but I cannot give my boys salmon, me and the baby are the only ones that will eat it so I use tuna as I know it will get eaten.

Gluten Free: Tuna and Potato Bake

Ingredients:

  • 3 large potatoes, washed, peeled and diced
  • 425g can of tuna, drained
  • 1 large onion, peeled and diced
  • 1 cup grated cheese
  • 1 cup gluten free breadcrumbs- I use the Orgran All Purpose Crumbs
  • 1/2 cup tomato sauce
  • salt and pepper to taste

Method:

  • Boil the potato and onion together in a large pot until the potato is soft
  • Mash together. I use a little milk and butter to help me do so.
  • Mix the tuna in the potato.
  • Add the tomato sauce and grated cheese and mix well
  • Spray a baking dish and place the mixture into the dish
  • Sprinkle with gluten free bread crumbs, rice crumbs or all purpose crumbs
  • Bake in moderate oven for 30 mins.

Monday – Gluten Free: Tuna and Potato Bake with steamed veg

Tuesday - Melinda’s Risotto Cakes with salad

Wednesday - Gluten Free Fettuccine Carbonara

Thursday - Slow Cooker Corned Beef with Roast Vegetables

Friday - Herbed Chicken Drumsticks for the boys. Roasted Vegetable Frittata.

Saturday - Homemade Pizza

Sunday - Simple Supper (meaning leftovers)

  2. Gluten isn’t an issue in our house, but this looks like a yummy take on a traditional tuna casserole and I may just give it a try.
