I thought I would share another super simple recipe with you this week. I love recipes like this, easy, adaptable and my kids love it so every chance yours might too. I call it egg bake as it is eggs mixed with vegies and baked.
Gluten Free: Egg Bake
Ingredients
- 4 eggs
- dash milk
- handful of grated cheese
- cut up vegies, things like: carrot, capsicum, mushroom, potato, pumpkin, peas, corn, cauliflower, broccoli.
Method
- Mix all ingredients
- Bake in moderate oven until cooked through, about 40 mins.
See – so easy!

Monday - Egg Bake with homemade wedges
Tuesday - Eggplant Parmigiana
Wednesday - Tuna and Mushroom Pasta Bake
Thursday - Burritos (meat for boys and bean for me)
Friday - Slow Cooker Sausage Casserole for boys and a vegie stirfry for me, both served with rice
Saturday - Homemade Pizza night
Sunday - Simple Supper Night
