Gluten Free: Egg Bake and Weekly Menu Plan

I thought I would share another super simple recipe with you this week. I love recipes like this, easy, adaptable and my kids love it so every chance yours might too. I call it egg bake as it is eggs mixed with vegies and baked.

Gluten Free: Egg Bake

Ingredients

  • 4 eggs
  • dash milk
  • handful of grated cheese
  • cut up vegies, things like: carrot, capsicum, mushroom, potato, pumpkin, peas, corn, cauliflower, broccoli.

Method

  • Mix all ingredients
  • Bake in moderate oven until cooked through, about 40 mins.

See – so easy!

Weekly Menu Plan

Monday - Egg Bake with homemade wedges

Tuesday - Eggplant Parmigiana

Wednesday - Tuna and Mushroom Pasta Bake

Thursday - Burritos (meat for boys and bean for me)

Friday -  Slow Cooker Sausage Casserole for boys and a vegie stirfry for me, both served with rice

Saturday - Homemade Pizza night

Sunday - Simple Supper Night

    Planning on making mini frittatas – eggs and greek yoghurt with garlic, cherry tomatoes, mushroom and basil :) Can’t give you quantities!
