Gluten Free Banana Cake and Weekly Menu Plan

I actually featured this cake recipe 2.5 years ago. I thought I would pop it up again for my newish readers as it is such a great cake recipe.

Gluten Free Banana Cake

Ingredients

  • 125gms butter, melted
  • 1 egg
  • 1 1/2 cup gluten free self raising flour
  • 3/4 cup sugar
  • 3 bananas, mashed
  • 1 tsp bi-carb soda dissolved in 1/4 cup milk

Method

  • Preheat oven to 180 degrees Celsius
  • Mix ingredients in a bowl  and combine well
  • Pour into well greased or oiled loaf tin. Works great in muffin tins as well
  • Bake 50 minutes or until cooked through
  • Can be iced with lemon icing and coconut sprinkled on top

WednesdayCreamy Spring Veg Pasta (minus the bacon)

Thursday – Veg and Bean Burriotos

Friday – Family Birthday dinner

Saturday – Home Made Fish and Chips

Sunday – Simple Supper

    Oooh, I think my three year old would love Friday’s menu!! hehe!! :)
