I actually featured this cake recipe 2.5 years ago. I thought I would pop it up again for my newish readers as it is such a great cake recipe.
Gluten Free Banana Cake
Ingredients
- 125gms butter, melted
- 1 egg
- 1 1/2 cup gluten free self raising flour
- 3/4 cup sugar
- 3 bananas, mashed
- 1 tsp bi-carb soda dissolved in 1/4 cup milk
Method
- Preheat oven to 180 degrees Celsius
- Mix ingredients in a bowl and combine well
- Pour into well greased or oiled loaf tin. Works great in muffin tins as well
- Bake 50 minutes or until cooked through
- Can be iced with lemon icing and coconut sprinkled on top

Tuesday – Baked Tuna Risotto
Wednesday – Creamy Spring Veg Pasta (minus the bacon)
Thursday – Veg and Bean Burriotos
Friday – Family Birthday dinner
Saturday – Home Made Fish and Chips
Sunday – Simple Supper
