This week I am sharing a recipe that was inspired from my aunty. I made it gluten free and changed a couple of things and out come a really yummy fruit slice.
Gluten Free Fruit Slice
Ingredients
- 2 cups dried fruit – I use Woolworths Home Brand
- 2 cups gluten free self raising flour – I use Orgran
- 3/4 cup coconut
- 1/2 cup sugar
- 2 eggs
- 185gm melted butter
Method
- Preheat oven to 180 degrees Celsius
- Mix all dry ingredients together
- Add melted butter and beaten eggs to the dry ingredients
- Mix well
- Pour into oiled or greased slice tin
- Bake 25 mins
- Ice with lemon icing if desired

Monday – Tuna and Potato Casserole
Tuesday – Vegetarian Bean Burgers
Wednesday – Homemade Fish and Chips
Thursday – Chickpea Casserole with Potato Dumplings
Friday – Best Ever Chicken with Mexican Potatoes
Saturday – Low Fat Pasta Boscaiola – made gluten free using gluten free pasta and stock
Sunday – Simple Supper
