Gluten Free Fruit Slice Recipe and Weekly Menu Plan

This week I am sharing a recipe that was inspired from my aunty. I made it gluten free and changed a couple of things and out come a really yummy fruit slice.

Gluten Free Fruit Slice

Ingredients

  • 2 cups dried fruit – I use Woolworths Home Brand
  • 2 cups gluten free self raising flour – I use Orgran
  • 3/4 cup coconut
  • 1/2 cup sugar
  • 2 eggs
  • 185gm melted butter

Method

  • Preheat oven to 180 degrees Celsius
  • Mix all dry ingredients together
  • Add melted butter and beaten eggs to the dry ingredients
  • Mix well
  • Pour into oiled or greased slice tin
  • Bake 25 mins
  • Ice with lemon icing if desired

Monday – Tuna and Potato Casserole

Wednesday – Homemade Fish and Chips

Thursday – Chickpea Casserole with Potato Dumplings

Friday – Best Ever Chicken with Mexican Potatoes

SaturdayLow Fat Pasta Boscaiola – made gluten free using gluten free pasta and stock

Sunday – Simple Supper
