Since I received some gluten free bread crumbs from the Lifestyle Bakery I thought I would try a Tuna Burger recipe. This was a hit with all members of the family. I even had mine on a gluten free white roll! I adapted it from here.
Gluten Free Tuna Burgers
Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 1 garlic cloves, crushed
- I carrot grated
- 425g can tuna, drained, flaked
- 1 cup gluten free bread crumbs – I used Lifestyle Bakery ones
- 3 eggs
Method
- Heat half oil in pan and cook onion, garlic and carrot for a few minutes, set aside and cool slightly
- Add tuna, onion mixture, gluten free breadcrumbs and beaten eggs
- Mix very well together
- Shape into patties
- Chill in fridge before cooking if desired (can help burgers stick together when cooking)
- Heat rest of oil in pan
- Cook burgers until cooked through and browned on both sides.
- Serve on rolls with choice of salad ingredients
- I also served ours with sweet potato fries – yum!

Saturday – Chickpea Loaf with homemade hashbrowns and steamed veg
Sunday – Simple Supper night (and Easter – Happy Easter!)
