This past week has been awful for me, yuk yuk with a head cold, sinus and the like. I have blocked ears so can’t hear anything and a sore throat and have lost my voice. As you could imagine I haven’t been up to much but hubby managed to do this recipe for me and take a photo so I can start getting recipes on here again.Thanks hubby!
Gluten Free Tuna Impossible Pie
Ingredients
- 1/2 cup gluten free self raising flour – I use Orgran
- 4 eggs
- 1 tbspn butter, melted
- 425g can tuna, drained
- 1/2 cup grated cheese
Method
- Preheat oven to 180 degrees Celsius
- Spray a casserole dish with oil spray
- Mix all ingredients in a bowl until well combined
- Cook 50 mins until top is golden brown and mixture cooked through
What is good about this dish is that you can use salmon instead of tuna or mixed veg or both, its very versatile.

Monday – Gluten Free Tuna Impossible Pie
Tuesday – Vegetarian Curry
Wednesday – Tacos (mince beef for boys and red kidney mix for me and trimmings)
Thursday – BBQ Chicken on a stick for the boys, satay stir fry vegies for me and rice for all
Friday - Vegetarian Bolognaise (can’t wait to try this!)
Saturday – Pumpkin Soup with garlic bread (can’t get enough soup at the moment)
Sunday – Simple Supper
