Gluten Free ‘Kentucky’ Baked Chicken Drumsticks Recipe and Weekly Menu Plan

I have a chicken drumstick recipe for you this week that my husband and boys love. It is very easy to make. I am not a chicken fan so I’ll pass thanks. They tell me is delicious. I adapted this from a recipe I found on Best Recipes. (which is a great site for recipes)

Gluten Free ‘Kentucky’ Baked Chicken Drumsticks Recipe

Ingredients

  • 1 kilo chicken drumsticks
  • 2 eggs, beaten
  • 1 cup gluten free plain flour – I use Orgran
  • 1 teaspoon curry powder
  • 1 teaspoon sweet paprika
  • 1 teaspoon nutmeg
  • 2 teaspoons dried parsley
  • salt and pepper if desired, I don’t as the kids are eating them
  • spray oil

Method

  • Preheat oven to 220 degrees Celsius
  • Prepare baking tray by placing baking paper on top and spraying lightly with oil spray
  • Slash chicken drumsticks with knife all over and roll in beaten egg
  • Combine flour and seasonings
  • Roll chicken drumsticks in flour mixture
  • Place chicken on trays
  • Bake for 15 mins, then turn and bake for another 15-20 mins or until cooked
  • Enjoy

Monday – Gluten Free ‘Kentucky’ Baked Chicken Drumsticks for the Boys, Salmon Cakes for me and Vegetable Bake for both

Tuesday – Slow Cooker Meatloaf with mashed potato for the boys and Roasted Vegetable Pasta for me

WednesdayTuna and Potato Bake with Steamed Vegetables

Thursday – Meat Burritos for the boys and Vegetarian Burritos for me

Friday – Homemade Pizzas (its my Tiniest Man’s Birthday!)

Saturday – Ham and Vegetable Strata (no ham for me), using gluten free bread also from 100+ Tasty Ten Dollar Meals

Sunday – Simple Supper Night
