Gluten Free Bean and Potato Bake Recipe

This a very yummy and tummy warming dish, so delicious and easy to make. I adapted it from Sophie Gray’s recipe.

Gluten Free Bean and Potato Bake

Ingredients

  • 6 potatoes, peeled and sliced
  • I onion, chopped
  • 1 x 400 gram tin diced tomatoes
  • 1 x 400 gram tin baked beans in tomato sauce (watch the ingredients to ensure gluten free)
  • 1 x 400 gram tin red kidney beans, drained and rinsed
  • pinch of sugar
  • grated cheese

Method

  • Place potato slices in a saucepan and boil for 10 mins.
  • Drain, set aside to cool. Be gentle to try and keep them in slices
  • Preheat oven to 200 degrees Celsius
  • Meanwhile, cook the onion in a saucepan with a little oil for a few minutes
  • Add all the beans and tomatoes, mix well
  • Cook for 10 – 15 minutes
  • Spray a baking dish with oil spray
  • Put some bean mix down
  • Then add 1/3 potato slices
  • Then spoon more bean mix
  • Then 1/3 more of potato slices
  • Then the bean mix
  • Put the final layer of potato slices, finish with the bean mixture
  • Top with the grated cheese and bake for 30 minutes
