This a very yummy and tummy warming dish, so delicious and easy to make. I adapted it from Sophie Gray’s recipe.
Gluten Free Bean and Potato Bake
Ingredients
- 6 potatoes, peeled and sliced
- I onion, chopped
- 1 x 400 gram tin diced tomatoes
- 1 x 400 gram tin baked beans in tomato sauce (watch the ingredients to ensure gluten free)
- 1 x 400 gram tin red kidney beans, drained and rinsed
- pinch of sugar
- grated cheese
Method
- Place potato slices in a saucepan and boil for 10 mins.
- Drain, set aside to cool. Be gentle to try and keep them in slices
- Preheat oven to 200 degrees Celsius
- Meanwhile, cook the onion in a saucepan with a little oil for a few minutes
- Add all the beans and tomatoes, mix well
- Cook for 10 – 15 minutes
- Spray a baking dish with oil spray
- Put some bean mix down
- Then add 1/3 potato slices
- Then spoon more bean mix
- Then 1/3 more of potato slices
- Then the bean mix
- Put the final layer of potato slices, finish with the bean mixture
- Top with the grated cheese and bake for 30 minutes
