As I said a few days ago, I have my cooking mojo back so I am delving into my recipe books getting all inspired to try new recipes. This week it’s a Rachael Ray cookbook – Look Book. Sometimes I can find them on the internet and if I can I’ll link them
Weekly Menu Plan with Gluten Free Meal Ideas
Monday – Super Sized 7 Layer Casserole. Love this idea, it’s like the Layered Mexican Dip except it’s a casserole. I have to make a few adjustments to make it gluten free (like use gluten free tortillas, pasta and flour – maybe leave the beer out) but it’s looks tasty!
Tuesday – Salmon and Sweet Potato Cakes. I’ll be using gluten free crumbs but other than that it’s an easy one to make gluten free.
Wednesday – Roasted Pumpkin Penne. I think it’s obvious but I’ll be using gluten free pasta for this one.
Thursday – Bacon, Leek and Tomato Polenta crusted Frittata – leaving the meat out for free and using gluten free vegie stock for me but this looks like a straight forward recipe. Yum!
Friday – Back to normal with Taco’s tonight, the boys will be craving something familiar by now I am sure.
Saturday – Homemade Pizza all around
Sunday – Simple Supper Night
