My Weekly Menu Plan including Gluten Free Ideas

It is another Monday and time for another meal plan, gosh these Monday’s roll around quickly. ANZAC Day on Wednesday which breaks the week up.

Weekly Menu Plan

Monday – Steamed Fish with Gluten Free Seasoned Wedges – with Rick Grant’s Wedges Seasoning Mix – so so yummy!

Tuesday – ‘Chicken on a Stick’ which is chicken pieces on skewers coated in BBQ marinade, stirfry vegies for me and rice for all.

Wednesday – Vegetarian Tortilla Pie – make with corn tortilla’s and black beans – yum

Thursday – Slow Cooker Meatloaf

Disney Movie: The Muppets DVD Review and Giveaway (for 2 winners!) now closed

Hands up people that remember ‘The Muppets’ from when they were a youngster? Oh I do and I was a tad worried that this movie wouldn’t be reminiscent of the Muppets we are used to seeing but I need not be, this movie was just delightful and a wonderful way to introduce the younger generation to the classic movies/shows we got to enjoy.

Both my hubby and myself loved the Muppets as youngsters and were looking forward to sharing this movie with our own 2 children. Happily our 7 year old son enjoyed it as much as we did and our 2 year old sit still only for the songs but that’s typical of his age group.

Thankfully some classical Muppets moments were included like the Old Grouchy Men and Miss Piggy’s famous move plus the fabulous opener. We get to see a surprising number of celebrity faces, most of them playing themselves, my favourite being Jack Black.

It was a fabulous movie from start to finish, no darkness or violence, a very family friendly movie that is safe for all ages to watch.

The Muppets will be available on DVD from May 16 2012 at all the usual retailers for $39.95 however for 2 lucky people I have a copy to giveaway each. All you have to do is tell me your favourite Muppets character and why in the comments below.

Writing Recipes

I like to try and post a new recipe every week. I have done pretty well in the past, my recipes page has almost 50 recipes on it, which is pretty good going I think!

Writing recipes is not as easy as it might seem. Firstly there are copyright issues to think of, basically you cannot simply copy another person’s recipe, word for word and call it your own. Secondly, not all recipes turn out! Sometimes I am lucky and it works first go but others, gosh it takes me ages to get a recipe to how I like it. For example, gluten free pizza base. I cannot tell you how many times I have tried but I cannot get one I like. I used to work in a pizza restaurant so I am pretty fussy when it comes to pizza dough and I haven’t found the perfect way yet.

And thirdly, if I find a recipe in a book that I like and want to post, if I cannot find a legal copy of the recipe online then I won’t post the recipe. It isn’t fair to the author that wrote the recipe book. I love alot of Donna Hay’s recipes and they are easily adaptable to gluten free but if I cannot find a copy Donna Hay herself has put online somewhere then I won’t post the recipe. And if I do, then I always post a link back to that. It is only fair.

If I do find one in a book that I really like and I cannot find online, then I will write and ask permission to use that recipe. I have only done that a handful of times and then answer as always been yes as long as full credit is made and usually a link to the recipe book.

If you are interested in writing recipes for the internet (or even a book) then be sure to check out this fabulous book: Will Write for Food by Dianne Jacobs. She also has a blog of the same name.

So if you haven’t seen a recipe post from me in a while, don’t worry I am always working on new ones and once I am happy with them, then I post them.

Also if there are any recipe requests, then please feel free to leave a comment or send me an email (nellbeblog @ gmail . com – without the spaces) and I shall do my best to see what I can come up with!

Gluten Free News: Food for Health, Miley Cyrus, Target, Hershey’s and Absolutely Gluten Free

I thought I might start a regular weekly post of gluten free news I have come across throughout the week. Cannot think of anything more exciting than just calling it ‘Gluten Free News’

Here we go: One of my awesome advertisers has a fantastic competition going on over at Facebook at the moment. Head over to Food for Health and check it out.

Isn’t it interesting how people are getting stuck into Miley Cyrus for talking about her new gluten free diet? She has a gluten and lactose intolerance apparently but she urges her fans on twitter to try no gluten and see how they go. Hmmm its that old ‘gluten free is cool but shouldn’t be’ dilemma again.

Did you see the new gluten free cheese rings and twists I found at Target?

For my US readers, did you see that Hershey’s have bought out a gluten free listing? Thank goodness Reese Peanut Butter Cups are on there – they are one of my favourites!

Great news for a Melbourne gluten free shop, they have recently expanded the shop and added a cafe. Congratulations Absolutely Gluten Free.

Bloggers BBQ with Target, Cottee’s, Crayola, McCormick, Lenard’s, Nad’s, Ella’s Kitchen, Fressure Foods and Kids Business

A couple of weeks ago I was lucky enough to be invited an event put on by Kids Business, Blogger’s BBQ.

I have been to the Blogger’s Brunches before so I knew what they were like, what was different about this one is that we got to bring our families along. Hubby and kids were welcomed as well. It’s great to be able to share these experiences with them.

This Blogger’s BBQ was held at the Powerhouse, Albert Park. Great venue, loads of space and it was lovely and cool inside.

Target

It was great to see such a large well known company at an event like this. Target were the partner sponsor of the whole event. Seeing companies like Target and Coles (at a previous Bloggers Brunch) shows us that they value the opinion of mums and the influence we have.

I like Target as a store as they have the best jeans I have ever worn (and cheap to boot, got my last pair for $15 on special). Target were sharing their new skin care line with us so I have given their day moisturiser a go. I like it because it is light and has SPF 15 in it. I think it is RRP for about $15 so it seems a a little pricey to me. I think if people had that amount to spend on their skincare, they would probably go with a more well known brand.

Cottee’s

I must admit we are not big cordial drinkers in this house. I might buy it on occasion when we have guests for a BBQ or party. My kids do prefer to drink milk and water  - I prefer them to as well! Cottees set up some water coolers with different flavoured cordial’s to try. I am a mean mum as I only let my eldest try some, he is 7 and my youngest is 2 1/2 and I think he is too young to drink it. My eldest loved it and declared the Lime flavour his favourite.

Crayola

The Crayola stand was a favourite with my two boys. They had 2 tables set up with lots of colouring in sheets, crayons and markers. My youngest loves the Mess Free Color Wonder’s. Crayon Twistables are the best invention ever as the crayons just get twisted up, they don’t break, just brilliant. We also found Pencil Twistables which look great too. No sharpener needed.

McCormick

McCormick’s had some great spice mixes and I just loved new recipe creation packets. Even though the ingredients listings do not list gluten containing ingredients, I got told on that day that nothing they had is gluten free. That puzzles me a bit as many of their products don’t say anything about containing wheat or gluten. So my gluten free friends, as always, it is up to you.

Their Slow Cooker flavour bases and new Recipe Bases look really good and can be such a time saver for mums. I did still get to take some products home for the boys and hubby to try. So far they have had 2 slow cooker sachets, Mild Chicken Curry, which was too spicy for the boys and Chicken, Bacon and Potato Bake which all of them just loved and I have been asked to buy again.

Lenard’s

I’ve shopped at Lenard’s before so I know their stores. Great again for time poor mums and getting a yummy dinner on the table. Or perfect for  entertaining. They cooked lots of yummy chicken kebabs that the boys couldn’t stop eating. Some products are gluten free BUT they are prepared with the other products so cross contamination is a risk. Nad’s

Isn’t Nad’s such a great Aussie success story? The creator/founder started the company from scratch 20 years ago and they have evolved and created many new products and are exporting overseas. I got to take home a few things and I haven’t had the chance to try them out yet. I am very anxious too and will update this post with an edit when I do.

What I also like about Nad’s is that have something for everyone. If you like to have your wax warmed before putting on? They have Warm Wax. If you are scared of burning and like to use cold wax, they have too. They have a facial wand for the face, wax strips and even a lotion for ingrown hairs. Plus if you get wax where you don’t want it, you just wash it away with warm water. Too easy.

Ella’s Kitchen

A very exciting time for Ella’s Kitchen as they have just launched in Australia in Coles Supermarkets. Ella’s Kitchen is a variety of organic foods especially designed for babies and toddlers. My toddler loves the Smoothie Fruits over yoghurt. He always gets cut up fruit but I like the variety that the pouches provide. As much as I would like I could never get that many different types of fruit into my son on a weekly basis. Plus they are organic and no nasties of any kind.

Fressure Foods

I walked up to the stand and the lovely man from Fressure Foods standing behind the table cheerfully said to me, ‘We are gluten free!’ How cool! I knew that of course as I love love LOVE these products. I told him he didn’t have to sell me on anything, I already knew and loved the products.

Well, what are the products I bet you are thinking. Avocados. Fresh. Ripe. And ready to use. Perfect for everything you use avocados for. They are peeled, deseeded, packaged and all ready to go. There are 3 kinds, Avocado Spread, Guacamole Mild and Guacamole Spicy. You can find them in Coles, in the produce section where the salads are and they are good value I think. RRP $3.99 a packet. Each packet has 2 avocados and in 2 separate packs. If you don’t use all the pack in one go, seal it back up tight and it can last another couple of days.

I would like to mention Rose A’more as they gave each mum and beautiful long steamed rose and Price Attack as we got a shampoo and conditioner in a goody bag when we entered. Britz Campervans were there too with one of their vans which totally excited the kids.

I would also like to mention something very exciting that happened to me personally. Many of the companies there had giveaways that you could enter for a chance to win some great stuff. There was electric woks and slow cookers, as well as big Crayola hampers and Cottees had a $250 card to giveaway.

Target, the major partner were giving away a $1000 gift card. Livina Nixon was the MC for the day and she put her hand in the box and drew out the name. It was ME! I won the $1000 giftcard from Target! Gosh I was and still am very excited. One of the ladies from Target asked me what I was going to buy with it. At that point I had no idea.

Then when I thought about it I realised Target sold something I had always wanted but the household budget never allowed for it….

Oh yes, that baby is mine and I have Target and Kids Business to thank for it.

All in all it was a fun day and my boys, all 3 of them had a wonderful day.

Gluten Free Quiche with Homemade Pastry

And that would be homemade Gluten Free Pastry.

Oh yes. I have shared this gluten free pastry recipe before but I wanted to give the Quiche I made with the pastry it’s own post and therefore it’s own link as I know I will be linking back to this post a lot. It is so so good.

Gluten Free Quiche with homemade Pastry Recipe

Pastry Ingredients

  • 250 grams cream cheese, softened
  • 225 grams butter, softened
  • 1 cup rice flour
  • 1 cup potato flour
  • 2 teaspoons xanthan gum

Method

  • Combine cream cheese and butter in a bowl. Stir until smooth. Add flours and xanthan gum, mix well. Chill 30 minutes.
  • Place strips on baking paper at bottom of muffin trays and spray with oil. Roll out the chilled pastry and cut into rounds for the muffin tray. Line the muffin cases, fill with desired filling and bake.

Quiche Filling

Ingredients for 6 cases

  • 3 eggs
  • 2 tablespoons milk
  • 1/4 cup grated cheese
  • cubed roasted pumpkin
  • feta cheese, cumbled
  • sundried tomatoes sliced
  • parsely
Method
  • Mix together and pour into the cases
  • Bake for 20 mins or until set.
  • Enjoy!

Gluten Free Quiche with homemade Pastry Recipe

Pastry Ingredients

  • 250 grams cream cheese, softened
  • 225 grams butter, softened
  • 1 cup rice flour
  • 1 cup potato flour
  • 2 teaspoons xanthan gum

Method

  • Combine cream cheese and butter in a bowl. Stir until smooth. Add flours and xanthan gum, mix well. Chill 30 minutes.
  • Place strips on baking paper at bottom of muffin trays and spray with oil. Roll out the chilled pastry and cut into rounds for the muffin tray. Line the muffin cases, fill with desired filling and bake.

Quiche Filling

Ingredients for 6 cases

  • 3 eggs
  • 2 tablespoons milk
  • 1/4 cup grated cheese
  • cubed roasted pumpkin
  • feta cheese, cumbled
  • sundried tomatoes sliced
  • parsely
Method
  • Mix together and pour into the cases
  • Bake for 20 mins or until set.
  • Enjoy!

New Gluten Free Products: Cheese Rings and Cheese Twists from Target

Just a quick post to say that I found these brilliant new snack foods at Target on the weekend. Right up the back near the lollies were 2 varieties, Cheese Twists and Cheese Rings, both Target brand and both gluten free.

Um did you get that – both GLUTEN FREE.

I know, I was pretty excited too especially as they were $2 a packet! (185 gms)

I did buy a packet of each and had to give them a little taste test and they were yummy. How lovely to have another snack food like this for party times.

And in case you were wondering…. I was not sponsored by Target to write this post, I just found them while browsing there.

Weekly Menu Plan with Gluten Free Ideas

I hope you all had a Happy Easter. We all did. I must admit I did like the public holidays that come with the Easter period. We use it as a chance to get some things done around the house. One thing I did get done that was on my to do list for a long time was to clear out the pantry and then inventory it. (using this printable)That is, make a list of everything that is there to make it easier to menu plan.

MondayGluten Free Tuna and Mushroom Pasta Bake

Tuesday – Slow Cooker Chicken Potato and Bacon Bake

Wednesday – Rice Noodle and Vegie Stir Fry – gluten free

ThursdayOven Baked Risotto – Donna Hay recipe – use gluten free stock to make gluten free. Plus I add roasted pumpkin, sundried tomatoes and feta cheese at the 30 min mark and it is so so yummy.

Remembering… Mr Seven

Last week, as inspired by Kate at Picklebums, I paused to remember the little things that make Mr 2 1/2 who he is today. Now it’s Mr 7′s turn.

Remembering…

just how darn clever he is, his reading, writing, maths are all streets ahead what I was at his age.

that when I quickly spoke to his teacher last week she told be he was ‘a wonder’ true praise indeed – my heart just about burst with pride!

peas and carrots are his favourite vegetables and watermelon his favourite fruit

the first thing he likes to watch when he is allowed to watch tv is the football. AFL all the way.

he still will hold my hand when we are walking and he still accepts hugs and kisses in public (I know this is bound to change soon!)

he is my sensitive soul, cares about what happens to others

is the best big brother and loves his little brother ‘to the moon and back times a google’

Ah he is awesome, my big boy.
