New Gluten Free Products: Cheese Rings and Cheese Twists from Target

Just a quick post to say that I found these brilliant new snack foods at Target on the weekend. Right up the back near the lollies were 2 varieties, Cheese Twists and Cheese Rings, both Target brand and both gluten free.

Um did you get that – both GLUTEN FREE.

I know, I was pretty excited too especially as they were $2 a packet! (185 gms)

I did buy a packet of each and had to give them a little taste test and they were yummy. How lovely to have another snack food like this for party times.

And in case you were wondering…. I was not sponsored by Target to write this post, I just found them while browsing there.

Gluten Free Pumpkin, Sundried Tomato and Feta Pasta Bake Recipe

I love the combination of pumpkin, sundried tomato and feta cheese. I had ample of all in my fridge that I had to use so I went searching for a recipe. Something simple and easy please. Thankfully I found this recipe from Best Recipes, so I tweaked it a little to make it gluten free of course.

Gluten Free Pumpkin, Sundried Tomato and Feta Pasta Bake Recipe

Ingredients

  • 500 grams pumpkin, peeled and chopped
  • 2 tablespoons olive oil
  • 250 grams gluten free pasta
  • 100 grams feta cheese, crumbled
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup cream
  • 1/2 cup parsley leaves, chopped
  • 1/2 cup grated cheese

Method

  • Preheat oven to 180 degrees Celsius. Spray a baking dish with oil spray.
  • Place pumpkin, garlic and oil in a baking pan and cook for 30 minutes.
  • Cook pasta in water until al dente. Drain and reserve about a cup of liquid.
  • Combine gluten free pasta, sundried tomato, feta cheese, cream and parsley leaves and then place in baking dish. Pour over a little of the reserved cooking liquid. Sprinkle with grated cheese.
  • Bake in the oven for 25 – 30 minutes or until golden.

Gluten Free Easter Eggs and Chocolate

Easter time is nearly upon us and for many of us, that means a celebration which includes food, namely chocolate.

Chocolate is one of those items that can turn out to be NOT gluten free but also, if you buy the right brand, can be gluten free.

In my experience here are the ones that are gluten free

  • Heritage Gluten and Nut Free Easter (here is a review I did last year) they are still available at Coles but also Woolworths, Target, Big W and KMart.
  • Sweet William may be a little harder to find as its dairy free as well as gluten and nut free. Check the major supermarkets and also the health speciality shops that sells gluten free goodies.
  • Check out Cadbury also, though not all of their eggs/chocolate are gluten free so check the labels! I usually find the solid Cadbury mini eggs and the hollow bunnies are gluten free.  You can get Cadbury Easter Products from major retailers

And I have to share this post with you from Melinda’s Gluten-free Goodies. She shares a fantastic way to have chocolate a different way for Easter

Update: I have been out and about searching the stores and have found a few other gluten free and nut free easter eggs.

  • Big W have a big range of nut free chocolate. In fact the one I went too had ‘nut free’ signs all over the place. All part of the Heritage range, there are bunnies, egg crates and boxed eggs. Just be careful as Hertiage make other types of chocolate so be sure to get the right one.
  • Woolworths have a small range of marco Easter goodies out, some of these are nut free, gluten free or dairy free.

Live Free Gluten Free Product Giveaway

I am not sure if you have noticed but my little side bar over there has expanded by one in the last month. I am delighted to announce that Live Free Gluten Free has become a Nellbe Gluten Free advertiser. I am very lucky!

Live Free Gluten Free also sent me a couple of their products to give a whirl in the kitchen.

First up, Live Free Gluten Free Chicken Seasoning. It was as simple as egging and crumbing some chicken, into the pan it went, cooked it and served it up.

The hubby and boys loved it. Actually I should say, LOVED it. They all declared it the best chicken I have ever made them.

The other product I tried out was the Live Free Gluten Free Pastry Mix. This was also simple to use as you just added butter then some water, stirred with a knife and hey presto! Gluten Free Pastry to roll out and cook with!

Yes it is that easy folks. Now Robyn the founder/creator of these mixes recommended blind baking the pastry once you roll it out and pop it into your dish ready for the filling. I did for my quiche as that was the bigger one but not the little apple pies I made.

For the quiche, I just mixed 2 eggs, some cream, milk, fetta, pumpkin, sundried tomatoes and grated cheese in a bowl and mixed then popped into the pastry shell and cooked it in the oven until it set. It was delicious!

Then I just rolled out little pastries to fit muffin tins, four of them was all I had enough pastry for. Then filled with apple and popped a little cover on it, brushed with milk and sprinkled a little sugar. Baked in a moderate oven until the tops browned. These were really yummy too.

My quiche and apple pies do look a little rustic, thats because my 2 year old sous chef took off with my rolling pin giggling with glee halfway through me rolling it so I ended up spreading the pastry with my hands. It seemed to work as well.

Now I didn’t give you any set quantities for this as I made 2 things out of one batch of pastry. The 700g packet of pastry mix makes 3 lots I think. You can make a myriad of things with this, pies, sausage rolls, quiches, tarts, its so versatile and it is not crumbly at all.
