Gluten Free Choc Chip Ice Cream Sandwich – Birthday Cake Recipe
About a month ago, my eldest son turned 7! This year celebrations included a family gathering for afternoon tea. Even though I was the only person requiring gluten free food, since I catered I made it all gluten free.
On the Gluten Free Party menu was:
- vegie and dip platter – I use Chris’ Tzatziki Dip (it’s gluten free)
- homemade potato wedges with sour cream
- cheese platter with a variety of cheeses like brie, extra tasty, colby and rice crackers – Woolworths Home Brand ones are gluten free
- fresh fruit platter
- bowls of lollies – yes gluten free ones, I found some at Christmas time from Big W but Woolworths have a Select brand in a green packet that are gluten free
- Plain Smith’s Chips in the blue packet
- Plain Doritos Corn Chips in the green packet
- Jarred salsa as a dip, watch the ingredients not all are gluten free, I use the Woolworths Home Brand one, found in the chips aisle.
- Gluten free cupcakes made from the Basco plain cake mix.
- Cadbury plain freddo frogs
Special Mentions to…
Gluten Free Whoopie Pies – oh they were a big success! Not the first time I had made them but the first time I had been happy enough to put them out and they went like that *snaps fingers* Thanks to Gluten Free on a Shoestring. Oh and I used a simple butter icing as the filling.
And the star of the show was the birthday cake, also all gluten free. The recipe is from the Australia Women’s Weekly’s More Cakes for Kids. It was printed in a magazine but unfortunately I don’t know which one! I did find it here online though so you can check it out. I adjusted a couple of things from the original recipe.
Gluten Free Choc Chip Ice cream Sandwich
Ingredients
- 2 litres vanilla ice cream – I used Cadbury’s Vanilla Ice Cream
- 125 grams butter
- 1/3 cup caster sugar
- 1/3 cup brown sugar, firmly packed
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup gluten free plain flour – I used Orgran
- 3/4 cup gluten free self raising flour – I used Orgran
- 3/4 cup dark chocolate bits – I used the Woolworths home brand (baking aisle)
- 20 chocolate melts – I used Cadbury Melts (baking aisle)
Method
- Bring ice cream out of the freezer to leave it soften. Line a cake pan with glad wrap.
- Spoon the ice cream into the cake pan, pressing down firmly and smoothing surface. Fold plastic wrap over ice-cream to enclose. Freeze for 3 hours or overnight until firm.
- Remove ice-cream from pan, still wrapped in plastic; place on oven tray or plate. Return to freezer.
- Preheat the oven to 180 degrees Celsius (130 degrees Celsius fan-forced). Oil spray cake pan.
- Beat the butter, extract and sugars in a mixing bowl with an electric mixer until light and fluffy.
- Beat in egg until combined.
- Stir in gluten free flours, then Choc Bits.
- Divide the dough in half; press one half over base of pan.
- Push chocolate melts onto top of dough.
- Bake the cookie for about 20 minutes. Stand in pan for 20 minutes; turn, top-side up, onto wire racks to cool.
- Repeat the cooking process with the rest of cookie dough or if you have 2 same sized cake pans then cook them the same time. I put chocolate melts on both halves as then you can serve the best one as the top.
- Place the plain cookie on serving plate top with the ice-cream, then other cookie. Serve ice cream sandwich immediately. Stores well in the freezer if there is any leftovers.
This cake was a big hit and so simple to make, a bit fancy with not a smidge of icing anywhere!

Gluten Free Pumpkin, Sundried Tomato and Feta Pasta Bake Recipe
I love the combination of pumpkin, sundried tomato and feta cheese. I had ample of all in my fridge that I had to use so I went searching for a recipe. Something simple and easy please. Thankfully I found this recipe from Best Recipes, so I tweaked it a little to make it gluten free of course.
Gluten Free Pumpkin, Sundried Tomato and Feta Pasta Bake Recipe
Ingredients
- 500 grams pumpkin, peeled and chopped
- 2 tablespoons olive oil
- 250 grams gluten free pasta
- 100 grams feta cheese, crumbled
- 1/2 cup sundried tomatoes, chopped
- 1/2 cup cream
- 1/2 cup parsley leaves, chopped
- 1/2 cup grated cheese
Method
- Preheat oven to 180 degrees Celsius. Spray a baking dish with oil spray.
- Place pumpkin, garlic and oil in a baking pan and cook for 30 minutes.
- Cook pasta in water until al dente. Drain and reserve about a cup of liquid.
- Combine gluten free pasta, sundried tomato, feta cheese, cream and parsley leaves and then place in baking dish. Pour over a little of the reserved cooking liquid. Sprinkle with grated cheese.
- Bake in the oven for 25 – 30 minutes or until golden.

Gluten Free Easter Eggs and Chocolate
Easter time is nearly upon us and for many of us, that means a celebration which includes food, namely chocolate.
Chocolate is one of those items that can turn out to be NOT gluten free but also, if you buy the right brand, can be gluten free.
In my experience here are the ones that are gluten free
- Heritage Gluten and Nut Free Easter (here is a review I did last year) they are still available at Coles but also Woolworths, Target, Big W and KMart.
- Sweet William may be a little harder to find as its dairy free as well as gluten and nut free. Check the major supermarkets and also the health speciality shops that sells gluten free goodies.
- Check out Cadbury also, though not all of their eggs/chocolate are gluten free so check the labels! I usually find the solid Cadbury mini eggs and the hollow bunnies are gluten free. You can get Cadbury Easter Products from major retailers
And I have to share this post with you from Melinda’s Gluten-free Goodies. She shares a fantastic way to have chocolate a different way for Easter
Update: I have been out and about searching the stores and have found a few other gluten free and nut free easter eggs.
- Big W have a big range of nut free chocolate. In fact the one I went too had ‘nut free’ signs all over the place. All part of the Heritage range, there are bunnies, egg crates and boxed eggs. Just be careful as Hertiage make other types of chocolate so be sure to get the right one.
- Woolworths have a small range of marco Easter goodies out, some of these are nut free, gluten free or dairy free.

Cheap Groceries – Grocery Clearance Stores
A great way to shave some money off the family budget is to spend a little less on the food component. I find checking out a grocery clearance store every few weeks a great way to pick up some things cheaply.
The one in Victoria is called NQR and has locations all over Victoria. The shops are usually on the small side and they don’t spend any money on decor. It carries different things at different times. Sometimes I may go there and only get a couple of things but sometimes I get a couple of bags worth.
In fact I went yesterday and this is what I got for under $20.

Live Free Gluten Free Product Giveaway
I am not sure if you have noticed but my little side bar over there has expanded by one in the last month. I am delighted to announce that Live Free Gluten Free has become a Nellbe Gluten Free advertiser. I am very lucky!
Live Free Gluten Free also sent me a couple of their products to give a whirl in the kitchen.
First up, Live Free Gluten Free Chicken Seasoning. It was as simple as egging and crumbing some chicken, into the pan it went, cooked it and served it up.
The hubby and boys loved it. Actually I should say, LOVED it. They all declared it the best chicken I have ever made them.
The other product I tried out was the Live Free Gluten Free Pastry Mix. This was also simple to use as you just added butter then some water, stirred with a knife and hey presto! Gluten Free Pastry to roll out and cook with!
Yes it is that easy folks. Now Robyn the founder/creator of these mixes recommended blind baking the pastry once you roll it out and pop it into your dish ready for the filling. I did for my quiche as that was the bigger one but not the little apple pies I made.
For the quiche, I just mixed 2 eggs, some cream, milk, fetta, pumpkin, sundried tomatoes and grated cheese in a bowl and mixed then popped into the pastry shell and cooked it in the oven until it set. It was delicious!
Then I just rolled out little pastries to fit muffin tins, four of them was all I had enough pastry for. Then filled with apple and popped a little cover on it, brushed with milk and sprinkled a little sugar. Baked in a moderate oven until the tops browned. These were really yummy too.
My quiche and apple pies do look a little rustic, thats because my 2 year old sous chef took off with my rolling pin giggling with glee halfway through me rolling it so I ended up spreading the pastry with my hands. It seemed to work as well.
Now I didn’t give you any set quantities for this as I made 2 things out of one batch of pastry. The 700g packet of pastry mix makes 3 lots I think. You can make a myriad of things with this, pies, sausage rolls, quiches, tarts, its so versatile and it is not crumbly at all.
You can buy the Live Free Gluten Free Mixes from them online or some gluten free shops if you are lucky enough to have one close by. Check their stockists to see where.

Coeliac Awareness Week 2012 and Gluten Free Apple and Blueberry Tarts Recipe
As I mentioned in my previous post, Coeliac Awareness Week is next week, 13th – 20th March 2012. I shared a Gluten Free Fish Tacos Recipe.
Thanks to Coles and Coeliac Australia I can also share another wonderful recipe with you. And this recipe is not just wonderful, it is amazing. It really is. I am not a pastry maker as gluten free pastry is traditionally hard to work with because it is so crumbly. This pastry is not crumbly in the slightest, it is amazing to work with and I made a sweet and savoury dish from the one batch of pastry and it was delicious.
Gluten Free Apple and Blueberry Tarts
Ingredients
Pastry
- 250g cream cheese
- 225g butter, softened
- 220g (1 cup) rice flour
- 200g (1 cup) potato flour
- 2 teaspoons xanthan gum
Filling
- 300g blueberries (frozen are fine)
- 2 Granny Smith apples, peeled, cut into 1 cm cubes
- 1 tablespoon gluten free cornflour
- 1/4 cup caster sugar
- 1 egg white, beaten lightly
Method
- Combine cream cheese and butter in a bowl, stir until smooth. Add sifted flours and xanthan gum. Mix well. Chill dough for 30 minutes.
- Preheat oven to 180 degrees Celsius. Grease 8 muffin pans and line with strips of baking paper hanging over the edges (to help lift tarts out)
- Roll out the chilled pastry on a surface lightly dusted with potato flour until 3 mm thick. Cut out 8 x 10 cm rounds. Line the muffin pans with the pastry. Cut out 8 x 8cm rounds to fit the tops.
- If using frozen berries, thaw and drain well. Mix together the blueberries, apple, cornflour and sugar.
- Spoon the berry/apple mixture into the pastry cases and brush tops with a little egg white. Sprinkle a little extra caster sugar on top. Bake about 40 minutes or until golden.
- Dust with gluten free icing sugar if desired. Can also be made as one big tart.
And as I mentioned before, I made a savoury dish with the leftover over pastry. I made Gluten Free Mini Quiches. I quickly whipped up a couple of eggs, dash milk, some grated cheese, chopped cherry tomatoes and poured them into tart cases. I didn’t bother with the tops.
As you can see they are rustic but oh my they were delicious.
