Weekly Menu Plan with Gluten Free Meal Ideas
Wowsers, we had a very big weekend, with my son turning 7. While I still get used to the fact that I am now the mother of a 7 year old, I’ll share this weeks meal ideas.
Weekly Menu Plan
Monday – Bangers and Mash (need simple comfort food badly) with lots of steamed veg.
Tuesday – Tuna Risotto with home made wedges
Wednesday – Lentil Shepherd Pie – so hearty and filling, easily gluten free
Thursday – Gluten Free Fettuccine Carbonara
Friday – Gluten Free Baked Chicken with Tomato Sauce - scroll down for the recipe
Saturday – Mediterranean Tuna and Rice Pie – the rice is the base so easily gluten free – just use gluten free stock
Sunday – Simple Supper Night

Oh Mama Mia
I was checking out my blog reader today and come across an article by Mia Freedman. I am sure you have heard of her? Her blog is amongst the most well known in Australia, Mamamia. She wrote “Does anyone eat anything anymore?” about how annoying it is that people bang on about how they can’t eat sugar or gluten or dairy or additives… how trendy it has become.
As I write this, that particular post has over 350 comments with the majority of people disagreeing with her.
I have been a diagnosed coeliac for 9 years. Yes it is something I am born with and no I cannot have just a little bit. I hate hate HATE having coeliac disease. Yes I truly hate having it because I am not a show pony, I hate being the centre of attention and I hate having to explain details of my personal life to strangers just to get them to understand. Yes of course I feel better but doesn’t make it easier.
People pretending they are allergic is just plain wrong. Personally I have never seen/heard anyone doing so but I don’t doubt it happens.
I also admit that I like that there are articles like this one around, it does bring to the forefront of people’s mind about the reality of food allergies and intolerance’s. It gets people talking, I have had several emails from people saying to me, ‘Did you see Mia’s article?’ The more it is talked about the more education that will come from it and that is my ultimate goal.
If that means that gluten free is trendy that I am sorry I am all for it. I love that there are so many products out there, I love that cafes and restaurants are trying to cater for us (more education needed here though) I love that people are putting on invitations ‘please advise of any special food needs’.
Why? Because in the 9 years I have been diagnosed as having coeliac disease, I still feel like an outsider, I still feel like I am being a pain in the rear end in restaurants and I apologise all the time for something I cannot control. If it is trendy then I might just be trendy for 5 minutes and it might make me feel a bit better about myself and surely this can only be a good thing?

Gluten Free Pan Fried Fish Fillet Recipe
A very yummy and simple dish to make. I amended this recipe from Best Recipes. Very yummy with home made chips and salad.
Gluten Free Pan Fried Fish Fillet Recipe
Ingredients
- 4 fillets white fish – I used whiting
- 2 eggs
- 1/4 cup gluten free plain flour – I used Orgran
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- salt and pepper
- 1 tablespoon grated cheese
- 1 teaspoon seeded mustard
- 2 tablespoons dried parsley
- 1 tablespoon oil
- 1 tablespoon butter
Method
- Mix gluten free flour, paprika and oregano together.
- Pat the fish dry with paper towel, coat in seasoned flour mixture.
- Mix eggs, salt, pepper, cheese, mustard and parsley in a bowl.
- Dip fillets in the mixture.
- Heat oil and butter in a large fry pan on medium high, once butter is melted add fish to pan.
- Cook 8-10 minutes, or until tender, cooked through and golden on both sides.
- Remove fish from pan and drain on paper towel.
- Serve and enjoy!

Hello lovely Friday, such a lovely Friday you are too. Such a gorgeous sun shining day. School is back for my Little Man and he is a big Grade One now. Growing up so fast.
Friday also means a ‘Things I Know’ post and linking up to share with others but our current host has needed to have a bit of a blogging break so she isn’t hosting at the moment.
But I still feel the need to share my things I know so I hope you don’t mind if I do!
Things I Know:
Naomi from Seven Cherubs is an absolute inspiration. She found out a blogging friend had lost her husband unexpectedly, just a mere 3 months after losing her 10 year old son. Naomi stepped in quickly and organised a virtual hat to pass around and so far the tally raised is almost $30,000. With Lisa all of sudden becoming a single mum to her 3 other sons this money is going to come in very handy. Naomi is also organising a facebook auction. Good on you Naomi – you are amazing.
My gorgeous Tiniest Man is 2 years and 5 months old and he has dropped his day nap. I am sad on one hand but glad on the other. Sad because I love the hour at lunch time to either breath and have a break or race around and get things done toddler free. I am glad because it means I don’t have to plan my day around school and naps, just school now.
I am waiting very impatiently for a special package to arrive. I am doing Project Life this year and it is so popular that it sold out of everything before you could blink so when I ordered it was on backorder. I cannot wait for it and am loving taking a million photos. To keep up with the journaling I am using a website Oh Life which emails you every day.
It seems I don’t know very much this week so I shall leave it there for now.

Woolworths Gluten Free Specials ending 31st January 2012
Last week I shared some great gluten free specials that Woolworths had. Since I have come across this weeks catalogue and there are a few more gluten free specials, albiet not as good as last weeks, but nonetheless I thought I would share them with you as any special is a good special right?
- macro Gluten Free Banana Bread or Cupcake Mix – $3.50 each
- Healtheries Corn Tubes Pk 10 – $4.29 (gluten free)
- Freedom Foods Nut Free Bars Pkt 6 – $4.99 (gluten free)
- Vege Chips Multi Pkt 12 2 for $12 (gluten free)
and as far as I know these are all located in the Health Food aisle.

Gluten Free Back to School Lunch Ideas
Even though we still have 2 weeks until school starts, some children around the country are heading back to school in a few days time!
A common question on the tip of every mum’s lips is what to give the kids for lunch? Even more so if you cannot give them the traditional sandwich due to allergies.
Here are my list of school lunches, the best thing is that anyone can have them for lunch, you don’t have to be a kid going to school.
- Risotto Cakes – you can make your own or use this great mix from Melinda’s.
- Mini Quiches – can be made gluten free
- Rice Salad
- Pasta Salad – again be made gluten free
- Rice Cakes with toppings
- Mixed salad with can tuna
- Mixed bean salad
- Gluten free bread, toasted then spread with Mighty Mite, topped with cheese and grilled until the cheese is melted. Slice when cool, really yummy when cold.
- Frittata
- Boiled Eggs with cut up veg and a little dip.
- Rice paper rolls
- Gluten free wraps filled with yummy fillings – I like the Old Time Bakery wraps
Lunch box fillers
You have the main event but sometimes you need extras to go with it or to have for morning snack time
- cubed cheddar cheese
- rice crackers
- sultanas and dried apricots
- cut up fruit
- rolled up ham slices
- gluten free fruit muffins
- gluten free banana cake (can be made into muffins)
- gluten free pikelets
General lunchbox tips
I know that there are some mums that struggle to even get their children to eat their lunch and we cannot rely on the teacher to make sure they eat as they usually have 20 odd children to look after.
- Make sure the lunchbox and containers used, the children can actually open.
- At my son’s school they usually only get 10 minutes to eat, so keep wrappers and containers to a minimum. Even though my son is almost 7, I cut things cut and make them bite sized so he can eat quickly with no prepartion.
- I don’t send youghut or full pieces of fruit, it just takes too long to eat and he just has them for after school snack so he still gets his nutritional requirements.
- Regardless of whether the school has requested it or not, I never send anything with nut products. I think its safer that way.
We use the Nude Food Movers range of lunchboxes, it fits the right amount of food in it for him and I love the fact we don’t need to use wrappers or plastic snack bags of any sort, saves so much rubbish(and money). He also takes a snack tube with extra’s in case he is hungry or they have extra time.
I bought the Nude Food Movers from Woolworths, they have excellent specials every now and then and you can get them 1/2 price sometimes. I have also seen them at Coles and Big W.
And a bonus tip for mums with toddlers at home, when I make my school aged son’s lunch I also make up lunch and snacks for my 2 year old for at home. I cannot tell you how convenient it is to have his food ready to go, if we are going out and what a blessing it is come lunch time. It doesn’t make me feel like I am in the kitchen all the time.
