Gluten Free News: Food for Health, Miley Cyrus, Target, Hershey’s and Absolutely Gluten Free
I thought I might start a regular weekly post of gluten free news I have come across throughout the week. Cannot think of anything more exciting than just calling it ‘Gluten Free News’

Gluten Free Quiche with Homemade Pastry
And that would be homemade Gluten Free Pastry.
Oh yes. I have shared this gluten free pastry recipe before but I wanted to give the Quiche I made with the pastry it’s own post and therefore it’s own link as I know I will be linking back to this post a lot. It is so so good.
Gluten Free Quiche with homemade Pastry Recipe
Pastry Ingredients
- 250 grams cream cheese, softened
- 225 grams butter, softened
- 1 cup rice flour
- 1 cup potato flour
- 2 teaspoons xanthan gum
Method
- Combine cream cheese and butter in a bowl. Stir until smooth. Add flours and xanthan gum, mix well. Chill 30 minutes.
- Place strips on baking paper at bottom of muffin trays and spray with oil. Roll out the chilled pastry and cut into rounds for the muffin tray. Line the muffin cases, fill with desired filling and bake.
Quiche Filling
Ingredients for 6 cases
- 3 eggs
- 2 tablespoons milk
- 1/4 cup grated cheese
- cubed roasted pumpkin
- feta cheese, cumbled
- sundried tomatoes sliced
- parsely
Method
- Mix together and pour into the cases
- Bake for 20 mins or until set.
- Enjoy!

New Gluten Free Products: Cheese Rings and Cheese Twists from Target
Just a quick post to say that I found these brilliant new snack foods at Target on the weekend. Right up the back near the lollies were 2 varieties, Cheese Twists and Cheese Rings, both Target brand and both gluten free.
Um did you get that – both GLUTEN FREE.
I know, I was pretty excited too especially as they were $2 a packet! (185 gms)
I did buy a packet of each and had to give them a little taste test and they were yummy. How lovely to have another snack food like this for party times.
And in case you were wondering…. I was not sponsored by Target to write this post, I just found them while browsing there.

Gluten Free Choc Chip Ice Cream Sandwich – Birthday Cake Recipe
About a month ago, my eldest son turned 7! This year celebrations included a family gathering for afternoon tea. Even though I was the only person requiring gluten free food, since I catered I made it all gluten free.
On the Gluten Free Party menu was:
- vegie and dip platter – I use Chris’ Tzatziki Dip (it’s gluten free)
- homemade potato wedges with sour cream
- cheese platter with a variety of cheeses like brie, extra tasty, colby and rice crackers – Woolworths Home Brand ones are gluten free
- fresh fruit platter
- bowls of lollies – yes gluten free ones, I found some at Christmas time from Big W but Woolworths have a Select brand in a green packet that are gluten free
- Plain Smith’s Chips in the blue packet
- Plain Doritos Corn Chips in the green packet
- Jarred salsa as a dip, watch the ingredients not all are gluten free, I use the Woolworths Home Brand one, found in the chips aisle.
- Gluten free cupcakes made from the Basco plain cake mix.
- Cadbury plain freddo frogs
Special Mentions to…
Gluten Free Whoopie Pies – oh they were a big success! Not the first time I had made them but the first time I had been happy enough to put them out and they went like that *snaps fingers* Thanks to Gluten Free on a Shoestring. Oh and I used a simple butter icing as the filling.
And the star of the show was the birthday cake, also all gluten free. The recipe is from the Australia Women’s Weekly’s More Cakes for Kids. It was printed in a magazine but unfortunately I don’t know which one! I did find it here online though so you can check it out. I adjusted a couple of things from the original recipe.
Gluten Free Choc Chip Ice cream Sandwich
Ingredients
- 2 litres vanilla ice cream – I used Cadbury’s Vanilla Ice Cream
- 125 grams butter
- 1/3 cup caster sugar
- 1/3 cup brown sugar, firmly packed
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup gluten free plain flour – I used Orgran
- 3/4 cup gluten free self raising flour – I used Orgran
- 3/4 cup dark chocolate bits – I used the Woolworths home brand (baking aisle)
- 20 chocolate melts – I used Cadbury Melts (baking aisle)
Method
- Bring ice cream out of the freezer to leave it soften. Line a cake pan with glad wrap.
- Spoon the ice cream into the cake pan, pressing down firmly and smoothing surface. Fold plastic wrap over ice-cream to enclose. Freeze for 3 hours or overnight until firm.
- Remove ice-cream from pan, still wrapped in plastic; place on oven tray or plate. Return to freezer.
- Preheat the oven to 180 degrees Celsius (130 degrees Celsius fan-forced). Oil spray cake pan.
- Beat the butter, extract and sugars in a mixing bowl with an electric mixer until light and fluffy.
- Beat in egg until combined.
- Stir in gluten free flours, then Choc Bits.
- Divide the dough in half; press one half over base of pan.
- Push chocolate melts onto top of dough.
- Bake the cookie for about 20 minutes. Stand in pan for 20 minutes; turn, top-side up, onto wire racks to cool.
- Repeat the cooking process with the rest of cookie dough or if you have 2 same sized cake pans then cook them the same time. I put chocolate melts on both halves as then you can serve the best one as the top.
- Place the plain cookie on serving plate top with the ice-cream, then other cookie. Serve ice cream sandwich immediately. Stores well in the freezer if there is any leftovers.
This cake was a big hit and so simple to make, a bit fancy with not a smidge of icing anywhere!

New Gluten Free Product Reviews: Simply Wize Hot Cross Buns, SlimPasta and That! Dairy Snack
Time for a round up of Gluten Free products I have been lucky enough to get asked to try out.
Simply Wize Hot Cross Buns
Growing up we always had a Hot Cross Bun on Easter Sunday for breakfast. Amongst the chocolate that Easter Bunny left us of course. It is a tradition I have always followed as I got older. Then becoming diagnosed as a coeliac… well my gluten free friends know what that is like. Another thing I have to miss out on.
Not any more! Simply Wize have produced their own Gluten Free hot cross bun which is gratefully received. I must admit when I first opened the packet I was disappointed at the size, they are small, like every baked gluten free item seems to be. But I was not disappointed in the taste, they are very yummy and will happily purchase them from Coles for $5.99 when I am buying for Easter. If you are looking for them, head to the gluten free frozen section of Coles.
SlimPasta
Interesting name isn’t it? SlimPasta, because it makes you slim or is slim itself? Perhaps a little of both. The ‘pasta’ is actually made from Konjac which is an Asian vegetable. It is fat free and has 6.4 calories per 100 grams. Crazy! I also saw on SlimPasta’s facebook page that consuming 250 grams like I did uses 1 ProPoint. (I have no idea what that means but I am guessing it’s good?)
I got to try the Angel Hair SlimPasta and made it up with some tomato pasta sauce and stir fried veg. It was different taste to pasta but was good. I was hoping for the ‘filling for longer’ feeling but didn’t really happen. Plus we had to use 2 packets for the 4 of us. I would easily have one packet to myself.
They are found in the health section of Woolworths for $3.69 per 250 gram packet.
That! Dairy Snack
Another interesting name. I was happy to give That! Dairy Snack due mainly to the fact they were gluten free, I am not ashamed to say. Trouble is when they arrived the kids nabbed them for themselves and I had to wrangle them just to get a taste!
They reminded me of yogo in terms of taste and texture but they seem ok in the sugar and fat content stakes. The boys just love them and my eldest has been nagging me to buy them again. Trouble is they are only available in school canteens (not his unfortunately!)
I don’t normally buy products like these as I like my son’s lunchbox to be as rubbish free as possible, the only time he gets disposables and throwaways is for school excursions. I’d happily buy That! for those occasions.

Gluten Free Pumpkin, Sundried Tomato and Feta Pasta Bake Recipe
I love the combination of pumpkin, sundried tomato and feta cheese. I had ample of all in my fridge that I had to use so I went searching for a recipe. Something simple and easy please. Thankfully I found this recipe from Best Recipes, so I tweaked it a little to make it gluten free of course.
Gluten Free Pumpkin, Sundried Tomato and Feta Pasta Bake Recipe
Ingredients
- 500 grams pumpkin, peeled and chopped
- 2 tablespoons olive oil
- 250 grams gluten free pasta
- 100 grams feta cheese, crumbled
- 1/2 cup sundried tomatoes, chopped
- 1/2 cup cream
- 1/2 cup parsley leaves, chopped
- 1/2 cup grated cheese
Method
- Preheat oven to 180 degrees Celsius. Spray a baking dish with oil spray.
- Place pumpkin, garlic and oil in a baking pan and cook for 30 minutes.
- Cook pasta in water until al dente. Drain and reserve about a cup of liquid.
- Combine gluten free pasta, sundried tomato, feta cheese, cream and parsley leaves and then place in baking dish. Pour over a little of the reserved cooking liquid. Sprinkle with grated cheese.
- Bake in the oven for 25 – 30 minutes or until golden.
