Weekly Menu Plan with Gluten Free Meal Ideas

Wowsers, we had a very big weekend, with my son turning 7. While I still get used to the fact that I am now the mother of a 7 year old, I’ll share this weeks meal ideas.

Weekly Menu Plan

Monday – Bangers and Mash (need simple comfort food badly) with lots of steamed veg.

Tuesday – Tuna Risotto with home made wedges

Wednesday – Lentil Shepherd Pie – so hearty and filling, easily gluten free

Gluten Free Pan Fried Fish Fillet Recipe

A very yummy and simple dish to make. I amended this recipe from Best Recipes. Very yummy with home made chips and salad.

Gluten Free Pan Fried Fish Fillet Recipe

Ingredients

  • 4 fillets white fish – I used whiting
  • 2 eggs
  • 1/4 cup gluten free plain flour – I used Orgran
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • salt and pepper
  • 1 tablespoon grated cheese
  • 1 teaspoon seeded mustard
  • 2 tablespoons dried parsley
  • 1 tablespoon oil
  • 1 tablespoon butter

Method

  • Mix gluten free flour, paprika and oregano together.
  • Pat the fish dry with paper towel, coat in seasoned flour mixture.
  • Mix eggs, salt, pepper, cheese, mustard and parsley in a bowl.
  • Dip fillets in the mixture.
  • Heat oil and butter in a large fry pan on medium high, once butter is melted add fish to pan.
  • Cook 8-10 minutes, or until tender, cooked through and golden on both sides.
  • Remove fish from pan and drain on paper towel.
  • Serve and enjoy!

Woolworths Gluten Free Specials ending 31st January 2012

Last week I shared some great gluten free specials that Woolworths had. Since I have come across this weeks catalogue and there are a few more gluten free specials, albiet not as good as last weeks, but nonetheless I thought I would share them with you as any special is a good special right?

and as far as I know these are all located in the Health Food aisle.

Gluten Free Back to School Lunch Ideas

Even though we still have 2 weeks until school starts, some children around the country are heading back to school in a few days time!

A common question on the tip of every mum’s lips is what to give the kids for lunch? Even more so if you cannot give them the traditional sandwich due to allergies.

Here are my list of school lunches, the best thing is that anyone can have them for lunch, you don’t have to be a kid going to school.

  • Risotto Cakes – you can make your own or use this great mix from Melinda’s.
  • Mini Quiches – can be made gluten free
  • Rice Salad
  • Pasta Salad – again be made gluten free
  • Rice Cakes with toppings
  • Mixed salad with can tuna
  • Mixed bean salad
  • Gluten free bread, toasted then spread with Mighty Mite, topped with cheese and grilled until the cheese is melted. Slice when cool, really yummy when cold.
  • Frittata
  • Boiled Eggs with cut up veg and a little dip.
  • Rice paper rolls
  • Gluten free wraps filled with yummy fillings – I like the Old Time Bakery wraps

Lunch box fillers

You have the main event but sometimes you need extras to go with it or to have for morning snack time

General lunchbox tips

I know that there are some mums that struggle to even get their children to eat their lunch and we cannot rely on the teacher to make sure they eat as they usually have 20 odd children to look after.

  • Make sure the lunchbox and containers used, the children can actually open.
  • At my son’s school they usually only get 10 minutes to eat, so keep wrappers and containers to a minimum. Even though my son is almost 7, I cut things cut and make them bite sized so he can eat quickly with no prepartion.
  • I don’t send youghut or full pieces of fruit, it just takes too long to eat and he just has them for after school snack so he still gets his nutritional requirements.
  • Regardless of whether the school has requested it or not, I never send anything with nut products. I think its safer that way.

We use the Nude Food Movers range of lunchboxes, it fits the right amount of food in it for him and I love the fact we don’t need to use wrappers or plastic snack bags of any sort, saves so much rubbish(and money). He also takes a snack tube with extra’s in case he is hungry or they have extra time.

I bought the Nude Food Movers from Woolworths, they have excellent specials every now and then and you can get them 1/2 price sometimes. I have also seen them at Coles and Big W.

And a bonus tip for mums with toddlers at home, when I make my school aged son’s lunch I also make up lunch and snacks for my 2 year old for at home. I cannot tell you how convenient it is to have his food ready to go, if we are going out and what a blessing it is come lunch time. It doesn’t make me feel like I am in the kitchen all the time.

Irresistible Gluten Free Show 2011 Melbourne Wrap-Up

The weekend before the last saw the Irresistible Gluten Free Show in Melbourne. The hubby, boys and I went with empty stomachs and good walking shoes.

We arrived at 9.45am (doors opened at 10am) and the queue just to get in was massive! I couldn’t believe the line and once the doors opened, it took us 10 minutes just to get the place!

Once we arrived we picked up our free showbags. (this is what was inside)

Then we hit the stands! We tasted some very yummy food. One thing that concerned me was that whole Thomas Dux, not all of the people helping out there knew what was gluten free and what was not. One person told a lady in front of me that the crackers were not gluten free. I then asked someone else who said they were. Just a little education beforehand may have helped this situation.

Macro wholefoods is from Woolworths and they were the major sponsor of the show. They have some very exciting products that are about to hit the shelves.

  • Gluten Free doughnut packet mix (sold out when I went to get some)
  • Gluten Free sponge cake packet mix

The expo itself was busy and hectic. Lots of stalls sold out of product. I did notice it seemed a little smaller than last year. If it is on again next year I would suggest widening those aisles and having more baby change facilities available. Oh and more seats please!

Irresistible Gluten Free Show Melbourne 2011 Ticket Giveaway

As I mentioned a couple of weeks ago, I am excited that it is September which means the Irresistible Gluten Free Show is back in Melbourne! It is being held Saturday 24th September and Sunday 25th September from 10am to 4pm at the Melbourne Exhibition and Convention Centre.

It is organised by the very popular dietitian Sue Shepherd and has a exhibition hall full of gluten free suppliers and producers so you can go and try an array of gluten free food.

I am doubly excited as one of my very favourite chefs has come back, Tobie Puttock, he will be demonstrating some recipes, there will also be a crowd favourite Jo Richardson(who has the best job in the world surely working with KitchenAid all day every day), Sue Shepherd, Rowie Dillion and Spencer Clements and there will be lots of information sessions also.

It has been running about 6 years I think and I have been every year. Here is what I thought last year and here is what I thought in 2008.
